These vines lie at 400 metres above sea level and are planted on shallow and stony soils. They are cultivated using organic agriculture with no pesticides, herbicides or chemicals that could damage the natural environment.\u003c\/p\u003e\n\u003cp\u003eIn the winery, the grapes are first macerated with the skins for a few hours in a “calcatórium” (granite basin).
