Filipa Pato "3B” Blanc de Blancs Espumante NV

Filipa Pato grew up in one of Bairrada’s most influential wine families, but the project she shares with her husband, Belgian sommelier and chef William Wouters, is distinctly their own. Based in Óis do Bairro, the couple works with indigenous varieties grown in biodynamically farmed vineyards, producing wines that emphasize freshness, purity, and the limestone soils of Bairrada.

Bairrada has a long history of sparkling wine production, thanks to its cool Atlantic climate and naturally high acid grape varieties. The current release of “3B” Blanc de Blancs is a blend of 70% Bical, 23% Maria Gomes, and 7% Cercial, sourced from chalky clay vineyards with a strong Atlantic influence. Primary fermentation takes place in tank with indigenous yeasts, followed by a second fermentation in bottle and nine months of aging on the lees. It is bottled without dosage, leaving the wine completely dry.

This is a terrific alternative to more familiar sparkling wines, with aromas of pear, citrus, fennel, and white flowers, along with a subtle smoky minerality. The palate is creamy and refined, with fine bubbles, lively acidity, and a clean, saline finish. Try it with salt cod fritters.
