Vinification and bottling are done at the Gentilini winery. The bunches are destemmed and lightly crushed. Fermentation and extraction are carried out in open vats. The grapes are gently pressed using a traditional manual basket press and the wine is allowed to sit on its lees for 3-4 months to develop complexity.
